The La Monferrina MULTI PASTA is a multi purpose attachment for select La Monferrina pasta machines that greatly increases the versatility and selection of your pasta production. The Multi Pasta has the ability to make fresh ravioli, automatically cuts pasta sheets to width and length, and makes gnocchi with optional attachments. The
Multi Pasta comes with your choice of one standard ravioli mould. Interchangeable ravioli moulds and cutting cassettes allow for a large variety of pasta production. The Multi Pasta works with the following La Monferrina machines, P6, P2 DV, P2 DVE, PNuova, and Cilindro.

    • Produces Ravioli in various shapes and sizes with optional interchangeable Ravioli Moulds
    • Produces Cut Pastas in various widths and adjustable
      length with the optional Cutter Attachment and Cutting Cassettes
    • Produces Gnocchi with the optional Gnocchi Attachment

OPTIONAL ATTACHMENTS:

1. Gnocchi Attachment: Make fresh potato-flake based Gnocchi with the optional attachment that mounts onto the Multi Pasta
2. Cutter Attachment: Automatically cut flat pastas to length with the optional cutter attachment. Optional interchangeable cutting cassettes determine the pasta attachments.

KEEPING PASTA DIES CLEAN:
We often get asked how we clean the dies for our pasta maker. The answer is simpler than you might think. We wash off any exterior dough and then soak them in water until the next use. Picking and poking at bronze dies with brushes and a scrubbing pad is a bad idea. It can etch and scratch the dies and this will adversely affect the extruded pasta. Soaking the used dies in water keeps the dough stuck in the nooks and crannies soft, so that the next time you use one, the new dough pushes out the old. Discard it and then keep going. This method won’t affect the new batch of pasta or damage the die in any way. As you store the dies you certainly want to change the water as it turns cloudy and keep them in a relatively cool spot, but overall maintenance is simple just soak and go.
